So one of my favorite household tasks is making my weekly menu and grocery shopping. I just find it so rewarding to craft a menu for the week that is delicious, healthy, interesting and uses up items we have on hand. I am secretly a depression-era housewife.
I love cooking and trying new recipes and cook dinner at home almost every night. I live with my mom so I plan the menu around both of our schedules. For example, tonight I won't get home until 6:30ish and have a hot date to watch the Bach with Cher at 7:30 so I needed to make something quick. For a quick dinner I am using a tried and true recipe for Shrimp, Kale and Avocado Quesadillas. Here is how I come up with my weekly menu: First I look in the fridge and see if we have anything on hand that needs to be used up. Then I look in the freezer and pantry to see what else we have that could be used. I make a list of these things starring the ones that need to get used up. Then I look at how many nights I need to plan dinner for. This week we needed dinners for Sunday through Thursday and had quite a few things on hand, particularly spinach and kale that needed to be used up and we had shrimp in the freezer as well as chicken breasts. Hence the quesadillas for Monday. Tomorrow I am making a super yummy recipe I did once before for Crunchy Honey Chicken with green beans on the side. Wednesday I am trying a new recipe for Mac & Cheese Spaghetti Squash (three of my favorite things not sure how they'll go together but I will give it a twirl) and Thursday trying another new recipe which seems pretty foolproof for Cheesy Burritos.
