Pilates Love + Healthy Substitutions
Yesterday I took my first pilates class in a long time and it was so fun! As much as I love my workout schedule and the classes I take it was a good reminder that it's fun to mix it up occasionally. After pilates I came home for a quick dinner before going to Cher's for DWTS. My dear mother had made Smothered Pork Chops and Roasted Turnips for dinner. They were delicious, especially the chops.
Turnips are not a vegetable we frequently make but we had some left over from the Farmhouse Vegetable Soup I made a few weeks ago and I wanted to use them up. They weren't bad but I prefer parsnips. I am very into substituting healthier options in recipes, for example apple sauce in place of oil in baked goods or my new thing of using veggies such as spaghetti squash or shredded carrots for pasta. I love milk so much but even skim milk in the vast quantities I drink it can be a little unhealthy. A friend at work suggested almond milk and I decided to give it a whirl. I got plain and vanilla unsweetened almond milk and am happy to report I liked them both very much. I also got a bag of Stevia in the Raw for baking with. I haven't tried it but I am interested to experiment. I really don't know what to think of Stevia/Truvia but I am open-minded and want to at least find out what it cooks like. Any suggestions/tips would be much appreciated. After dinner I headed to Cher's for DWTS and Snack Club. I made Cheesecake Stuffed Strawberries (sans graham cracker crumbs) and they were delish. I am still on team Zenyatta and Kellie. Tonight after Zumba I am trying a new recipe for Stroganoff made with ground turkey and served over spaghetti squash. Do you like pilates? Which kind do you prefer, mat or reformer? What healthy substitutions do you suggest? Have you tried almond milk and/or Stevia/Truvia?

I'm really into substituting healthier options in recipes, too. You know, pasta salad instead of turkey burgers. Pasta salad instead of fajitas. Pasta salad instead of African peanut stew. Pasta salad instead of ...
