Food Love

Happy Tuesday friends!  What did you think of the most shocking Bachelor finale ever?  SPOILER ALERT  I did think it was legitimately shocking.  I was entirely convinced he was going to pick Lindsey.  I'm happy he didn't but very surprised.  We had an excellent Snack Club if I do say so myself. 
I made Zucchini Tots.  They had good flavor but I think if I made them again I'd try to get them crispier, more like tator tots.  These were almost more like little quiches which is weird because I don't really like eggs.  Cher made Mini Cherry Cheesecakes and they were fantastic!  For dinner I made Carrot Pasta with Pesto.  I just used store-bought pesto sauce.  It was amazingly delicious.  You peel carrots into long strands, blanch them in water for about a minute and use them in place of pasta.  You can do the same thing with zucchini and I am eager to try that.  As I've mentioned before I cook with spaghetti squash in place of pasta a lot but I think I liked this even better.  I always have a hard time getting the spaghetti squash to the right stage of done-ness but the carrots had a perfect mouthfeel very similar to pasta.

Tonight I am making Spaghetti Squsah with Grilled Chicken and Sun-dried Tomatoes and tomorrow Slow-Cooker Black Bean and Zucchini Chili since I have a Railroad Museum board meeting after work and won't be home until late.  Have you ever tried replacing pasta?  Any favorite recipes?
