Spring Love


Even though it is still cold out it's finally starting to feel like spring.  I love the sunshine and hearing the birds chirp when I walk in to work in the morning.  This week has been a little busy but mostly with fun stuff so I can't complain.  Monday of course I watched DWTS and Cher made jello salad for Snack Club.  Yum! 
SPOILER ALERT I was very very glad Wynonna got sent home.  It was weird watching her dance because she seemed to barely be moving.  Snooze!  Also, the Chicken Parm wraps I mentioned here were totally delicious.  I am definitely making them again!  Yesterday I went to Zumba after work and then went to trivia.  My friend Jamie runs it at Titletown and it's very fun.  I get a little competitive and I kind of hate when we don't win.  Last night we tied for first but then lost on a tie breaker.  Do you know what year the United States implemented day light savings time and different time zones?  Me neither!  Tonight we are having my grandma over for dinner for her birthday.  I am making Cheesy Chicken and Wild Rice Casserole and a dinette cake.  I am going to try using Stevia in the Raw for the first time and will let you know how it goes.  I also need to wrap presents for my friends' Jordan and Kris' son baby C who turns one tomorrow!  Today someone told me about this super interesting recipe for pasta made with, wait for it, chicken!  Wacky, right?  She said she saw it on Rachael Ray.  After some sleuthing I tracked it down here on her website.  I have mentioned before how I like substituting veggies such as shredded carrots or spaghetti squash for pasta but I'm not sure how I feel about this.  I'm not really a fan of Rachael Ray.  She's just not my jam.  But I may have to give this a twirl.  What do you think?  How is your week going?  Isn't the sunshine fantastic?
